Epoxy can break down over time with knife use and also chip and splinter when used as a butchering or medium to heavy cutting surface. Small particles could get into your food, and thus get into your digestive system. Epoxy is a hard plastic surface, and harder on cleavers and knife blades, causing them to dull faster.

You shouldn't cut on resin. It will look terrible immediately no matter what finish you put on it and bits of resin will get in your food. Its probably not harmful but I wouldnt want to ingest resin. Use it only as a Charcuterie board and put a finish that adds a gloss and makes it easy to wipe off.

Food-safe mineral oil can be purchased at your local drug store or major retailer. Apply the mineral oil using a clean cloth and spread evenly over the board. Let the oil set in for a few hours, or even let it sit overnight if you can. Afterward, wipe the excess oil off using a dry cloth.

Both wooden and plastic cutting boards can be and are safe for any kind of food, with wood having a slight lead in terms of food safety and knife wear prevention.

Once hardened, resins are perfectly safe, including food safe. However, I don't recommend cutting on resin because you risk creating unsightly scratches in your board and the potential growth of bacteria that's collected due to repeated cutting.

I also tried cooking salt (aka kosher salt) and I found this worked almost as well as the Activa silica gel. The only difficulty I had was that the salt clumped around the entire petal and it was sometimes difficult to chip the salt away without damaging the petal.

Drying flowers is an essential first step before casting them in resin. If the flowers aren't completely dry, they can eventually rot in the resin mold. Using silica gel, which is available at any local craft store, you can quickly and thoroughly dry flowers.
