Adjust Bullets Form For Free

Typically, when you find that all new documents have altered formatting, it's because your Normal. dotm template has been changed. If you don't have customizations stored in Normal (like macros or autotext), the simplest way to correct this is to delete Normal.

Go to Home and select Line and Paragraph Spacing > Line Spacing Options at the bottom of the menu. The Paragraph dialog box opens. On the Indents and Spacing tab, select the options you want, and click OK. The Paragraph dialog box options are described in Adjust indents and spacing.

You need to turn on the view of white space between pages. It is easy to accidentally toggle this setting by double-clicking at the top or bottom of a page in Print View. You can also manage it by Word Options > Display and turn on the checkbox for "Show white space between pages in Print Layout view".

Click one of the bullets at the level you want to change in the document. Right-click the bullet and select Adjust List Indents in the pop-up menu.
