You need to ovrride the whole page layout, you can't just hide these fields.

Navigate to Setup. Look for Field Accessibility under Security Controls. Pick an Object > View by Profile > Pick a Profile. Required Fields display in Red.

Standard fields are default fields built-in to Salesforce. They can not be deleted.
