To change the type of chart, you can right-click an area of the chart and click Chart Type. This would open the Chart Type dialog box. It presents the various available types of charts and you can click one of them. If none of the available types suits you, you can click the Custom Type tab for more options.

Right-click your chart, and then choose Select Data. In the Legend Entries (Series) box, click the series you want to change. Click Edit, make your changes, and click OK. Changes you make may break links to the source data on the worksheet.

Click the Select Data button and you will see a menu window that will allow you to build a chart. If your graph is blank, you'll be able to select data and if your graph already contains data you'll be able to add extra data series and edit/modify existing data. Use the Add button on the left to choose the data.
