If you want to remove the embedding, you can turn off the Embed setting in the File > Options dialog box and save the file. Then, once you close and re-open the file, a different font is substituted for the font that had been embedded previously.

To create a manual table, go to References > Table of Contents > Click the dropdown to reveal the option for Manual Table. Microsoft Word inserts a TOC with placeholders which you can now edit. You can modify this with your own fonts and colors. Do remember that you also have to insert the page numbers manually too.

Ctrl-click on the text in your TOC that you want to remove to go to that text in the document. Change the style of that text from one that is used for TOC reference. (i.e. you do not want a Heading style.) You can have the formatting look the same if you want, but the style must be different.

This has to do with the style used for that content which should not be in your table of contents. That material is either formatted using a heading style or another style that you have told Word to put in your TOC. Change it to a body text or normal style.

Typically, a heading style has been applied to the paragraph containing the text or image, and thus it gets reported in the TOC where the TOC is set up to display text in several levels of headings. Changing the paragraph's style back to a body text style then updating the TOC solves that problem.

Put your cursor where you want to add the table of contents. Go to References > Table of Contents. and choose an automatic style. If you make changes to your document that affect the table of contents, update the table of contents by right-clicking the table of contents and choosing Update Field.

You can change the TOC styles after generating the TOC, but when you later regenerate, the TOC will again appear messed up. The only solution to this problem is to make sure that none of your headings use explicit formatting; they should rely only on styles.
