Thanks for your feedback. When a feature is disabled like that, it means that the for some reason Word can't handle it. John's suggestion of compatibility mode is one of the most common reasons. Converting to the new format will often fix the problem.

In Word 2016 use the flyout option in the Tracking section of the ribbon. Under Advanced Options change the Markup/Deletions pulldown menu item to Strikethrough.
