Google doesn't allow you to download the captions from a Google Meet meeting.

Turn on Transcripts in Google Meet Transcripts are saved in the meeting host's Google Drive for 3 months. To keep meeting transcripts longer, move the transcript files to another folder in your Google Drive. Transcripts contain the words spoken in a meeting, but not the chat messages from the meeting.

Go to Google Drive and sign in to your Google account. Click 'Go to Drive'. On the left panel, click 'My Drive' then select the folder entitled 'Meet Recordings'. Locate the recording, click the three-dotted icon (?) then select 'Download' to save it on your computer.

The captions have to be turned on for the extension to record the transcript, so if you turn off captions the transcript will stop being saved until you turn the captions back on. As different people in the Google Meet speak, the extension will save what they say in the Google Document.
